20lb turkey

Brined it overnight we'd to thurs, stuck it in the smoker today at 6:45AM. I was expecting it to take all day but to came up to temp in only like 4 hours. I let it chill in the smoker for a while longer to get the nice brown crust (monitoring temp the whole time) then took it out and let it rest. After resting I started to carve and the wings and legs fell right off of it. The breast was still very moist too. We are having our Thanksgiving day on Friday since we have family who works on the day.

looking for some kitchen knives

I have an 8" chefs knife that I got from...... You know what, I don't remember where. Doesn't matter.

I want some new knives. Mainly a chefs knife, around 8" I guess? Good for slicing bigger cuts of meat and chopping veggi s like carrots, potatoes, broccoli, etc. Also a small knife that makes it easy to cut smaller cuts of meat meat. Is that a paring knife? Is there a 3 or 4" chefs knife? Also, suggestions on a sharpener? I have one of those cheapo pull through ones now. Does OK, but I'm. Sure it could be better

10 hour smoked pulled pork

Dropped a pork butt in the smoker this morning. Once it hit The Shelf I wrapped it up and let it get to 210 before pulling it out and letting it rest for 30 min before shredding and shoving it into my face.

Did 2 racks of ribs yesterday for the first time, still need to work on that. 3-2-1 didn't quite work out. Didn't get pics of those though.

Do you use VMWare ROBO Licensing? Price changes coming

We recently had a meeting with our new (as in 4th in a year) rep. They let us know ROBO licensing is moving away from the VM Pack method it is now to per socket licensing. Minimum of 16 core per socket purchase, and you can’t stretch a license across multiple cores.

We about blew a gasket when we were told this. It is going to make our ROBO license jump from about $2K up to $30K PER YEAR. We were told changes to Ent+ are coming too, but details were not known. We are in the process of looking at how moving to another option would look like. Either Hyper-V or Nutanix AHV.

I guess we can see how Broadcom is making their money back. By screwing over their customers.
