This small commotion is used as casus belli, because that's all they're waiting for : an excuse to beat people to death.

If you forget that you are public servants, and you ignore our Constitutional rights, then you have no authority under that same Constitution.
If you hit one of us, then we are going to hit back, and we outnumber you 50-1. If you let the dogs loose on us, then we will kill the dogs, and the officer that looses them, as this is a lethal action with the intent of bodily harm.
If you gas us, or shoot us with "less lethal" weapons, then we will defend ourselves with as much force as necessary. We are exercising our rights as citizens, you are public servants with the express purpose of protecting citizens and upholding our rights. Police authority is written on the back of the social contract that enshrines our rights. You can't rip up one without ripping up the other.

Once the NG/Marines get involved, America is completely fucked. The protestors may still outnumber the LEO's but they have the weapons, training, and experience that evens the playing field.

Open carry rifles is probably the best way to keep the cops from escalating. If any group is planning on having open carry members, make sure they aren't plants and make sure they know proper trigger discipline. Make sure that no media sees them taking aim first or idly fingering the trigger. Do not have them in the middle of the group. Make sure that they are prepped to answer any questions clearly and directly to any press.
slight difference in de-escalation training though. Our police has years of civil-work-courses before they are allowed on the streets. Also gun culture is night and day, cops here dont feel urged to use lethal force, because criminals most of the times are unarmed here
I've seen videos of German police treating your protestors the same way US cops treat us. The only cops I've seen that seem to genuinely fear the people are the French, and as an American I understand being terrified of the French.

You're not wrong. But with today's tech its more unlikely that one sniper is going to be as effective. With drones equipped with IR it's a lot harder to stay hidden. And in a more urban environment, there are cameras everywhere, and the police have access to everyone's ring doorbell camera, its getting a lot easier for them to track people down.

Enough people have pointed out the flaw in the "self-defense" scenarios you're imagining, I don't believe you will come around to those without heavy education/exposure on past & current events involving police interaction and constitutional rights (there are a lot of good resources and public "auditors" online you should seek out). I will just point out the slippery slope that exists with the Sheriffs statements, "What is a brick?" - at what point does a brick become a rock/pebble or vice versa? "What is a firebomb?" - if any incendiary device is considered lethal, do firecrackers or sparklers count since it ignites?
An officer in full tactical/riot gear getting hit with a brick isn't lethal, yet a "non-lethal" firearm can kill from a shot in the face or beanbag to the chest in close range. Teargas can cause a fatal reaction if not treated in time. The "law-enforcement" in this instance have decided due-process (once again) isn't necessary and will pass judgement on your actions while punishing you with state-sponsored violence and/or death.

One could argue a peaceful protest is different from a riot and cops shouldn't kill peaceful protesters, but there's always a chance they will.
If someone wants zero risk, they can only do short operations that don't need much media coverage to be effective and without a chance for the cops to be present or find them afterwards.
All of those situations can be avoided by them not ordering their officers to show up and harass the protesters. If the cops actually stayed out of the way and allowed them to peacefully protest, there is never a point where anyone should get spit on, hit, or threatened. Then again, if police weren't treating everyone as criminals all the time, it would severely reduce the number of officers they would need.

that's true, but past violent protests with looting and causing damage led to broad calls of regular citizens for police to be there just in case. then, there are those among police who enjoy hurting others and will try to escalate any peaceful protest to a fight.
the only way to end this spiral, would be for protesters to instantly take down rioters among themselves, disperse and go home, so it would become a rare exception for riots to start and police would no longer show up after a few years. but is this realistic? even if some groups manage to do that, others won't. also police could always send instigators who throw the first brick, then leave, so their colleagues have a reason to kill some protesters
the point is to inspire people who don't want to risk their health or want to be more effective to find more effective ways to cause change.

Open carry rifles is probably the best way to keep the cops from escalating. If any group is planning on having open carry members, make sure they aren't plants and make sure they know proper trigger discipline. Make sure that no media sees them taking aim first or idly fingering the trigger. Do not have them in the middle of the group. Make sure that they are prepped to answer any questions clearly and directly to any press.

Afghanistan was even worse. People often think the Vietnamese were just the Vietcong but often forget that North Vietnam had an army and an air force. The North Vietnamese airforce had far more fighter aces than the US (with the top ace having shot down 9 US aircraft).
Afghanistan with the Taliban had next to nothing. Even when the US tightly controlled ammonium nitrate, which was the mainstay of IEDs they were able to switch to other stuff.

Enough people have pointed out the flaw in the "self-defense" scenarios you're imagining, I don't believe you will come around to those without heavy education/exposure on past & current events involving police interaction and constitutional rights (there are a lot of good resources and public "auditors" online you should seek out). I will just point out the slippery slope that exists with the Sheriffs statements, "What is a brick?" - at what point does a brick become a rock/pebble or vice versa? An officer in full tactical/riot gear getting hit with a brick isn't lethal, yet a "non-lethal" firearm can kill from a shot in the face or beanbag to the chest in close range. Teargas can cause a fatal reaction if not treated in time. The "law-enforcement" in this instance have decided due-process (once again) isn't necessary and will pass judgement on your actions while punishing you with state-sponsored violence and/or death.

One could argue a peaceful protest is different from a riot and cops shouldn't kill peaceful protesters, but there's always a chance they will.
If someone wants zero risk, they can only do short operations that don't need much media coverage to be effective and without a chance for the cops to be present or find them afterwards.
All of those situations can be avoided by them not ordering their officers to show up and harass the protesters. If the cops actually stayed out of the way and allowed them to peacefully protest, there is never a point where anyone should get spit on, hit, or threatened. Then again, if police weren't treating everyone as criminals all the time, it would severely reduce the number of officers they would need.

What was notable about Bundy Ranch is how gentle the police were even after they'd been shot at.
This wasn't an issue of firepower, it was an issue of white nationalism. Police sympathized with the ranchers in a way they simply do not with anyone young, particularly of color.
Compare that to the FBI raiding the Waco compound or the US Marshalls going after Ruby Ridge. Police have no trouble showing up at your door with a tank. The only thing that protects you is ethnicity.
