Thanks it turned out really good. I am pumped for hockey season to start. Canes didn't make many moves this off season so it will be interesting to see if they can run it back.

I do make a couple modifications though. I had chicken quarters in my freezer so that is what I used instead of the sausage. Browned them in a skillet on both sides than cooked them until fall off the bone. Removed and shredded the chicken than added back.
I only cook the tortellini in a separate pan right before serving since this makes such a large batch it will take us days to finish. Leaving tortellini in the soup causes them to fall apart and loose all of your liquid.
I had a few sprigs of fresh thyme so I added that as well and than removed the stems before serving.

I had a package of Biscoff biscotti that was broken so I just crushed it up fine and sprinkled on top. I didn't have any chocolate other than white to shave on the top so thought this would had some nice color.

Potato based. I do cheddar, Greek yogurt, onion powder, garlic powder, and salt with my base potatoes. The jalapeno and onion are just the "extra" flavor. Also made a bunch of bacon and chive but those will be frozen for another day.

I have a special pan for the poached eggs. It’s similar to this. https://a.co/d/3CIFHDF Alton Brown might not approve but I enjoy the ease of its single purpose.
