they used an egg steamer that corporations claim is a poacher. they steams the eggs.
that said, a touch of vinegar in the simmering water, stir the water to make tornado vortex thing and crack the egg into the spinning water. typically holds the egg together and the vinegars acid helps to congeal the egg a bit quicker.
How did you get your poached eggs into that tight, consistent shape? I'm guessing some type of cup, then how do you proceed from there?

Cool. You cook your eggs how you want and I guess I will steam mine. Works perfect to use every place a poached egg does.

im not a big avocado toast fan but once you throw egg on top yum. Scrambled for me though.
