Chicken Katsu & Iceberg Lettuce

Chicken katsu is my favorite version of fried chicken.

Heat oil to 350f/176c. I use peanut oil. Flatten chicken and season with salt and pepper. Beat eggs in a bowl. Coat chicken with flour and let rest for ten minutes. Dip chicken in egg then press into panko, aka japanese style bread crumbs. Fry until cooked and lightly season with salt.

I served this with shredded iceberg lettuce since I didn't have cabbage. The lettuce is lightly salted.

Seven-Vegetable Couscous

This is a recipe from a cookbook that I doubled since I was planning on giving some to family.

As you can see from the photos I had to change my pots to accommodate the amount of food.

I didn't have the right cut of meat so I used what I did have. Also, steaming the couscous over the pot didn't work for me and had to use a dedicated steamer to fully cook the couscous. I did over cooked certain vegetables so if I ever make this again I will have to time them better.

It was under seasoned at first but when I added more salt the flavors were more pleasant.

While I used there book for the recipe, it is also available online.

GRACE Tellus - Measuring Earth's Surface Mass and Water Changes

"The GRACE twin satellites, launched 17 March 2002, are making detailed measurements of Earth's gravity field changes and revolutionizing investigations about Earth's water reservoirs over land, ice and oceans, as well as earthquakes and crustal deformations. The two GRACE satellites have completed more than 13 years of continuous measurements!"
