TIL cheese is fundamentally just fat, protein...

I was eating this cashew cheese at a farmers market (it was delicious btw) and it made me think, wtf even is cheese? From a couple articles I found

Fundamentally, cheese is a concentrated source of fat and protein derived from a liquid base, structured into a semi-solid or solid form through a process called coagulation.

While we traditionally think of cow's, goat's, or sheep's milk, the "cheese" label applies to any food that replicates this specific structural transformation, regardless of the starting ingredient. Here is the breakdown of what makes something cheese at its core:

  1. The Core Mechanism: Coagulation

The defining characteristic of cheese is not the source (milk vs. nuts), but the method. To turn a liquid into a cheese-like solid, you must separate the solids (curds) from the liquid (whey).

In Dairy: You add an acid (like lemon juice or vinegar) or enzymes (rennet) to milk. This causes the casein proteins to denature and clump together, trapping milk fats within the matrix.

In Plant-Based (Cashew, Soy, Almond): Since there are no caseins or lactose, you usually rely on mechanical processing (blending soaked nuts into a paste) combined with fermentation or the addition of thickeners (like agar, tapioca starch, or nutritional yeast) to mimic that curdled texture.

  1. The Biological Component: Fermentation

Traditional cheese relies heavily on microbiology. Bacteria and fungi are added to the curds to:

Convert lactose into lactic acid (preserving the cheese and adding tang).

Break down proteins and fats over time (ripening/aging), creating complex flavor compounds (umami, nuttiness, sharpness).

In vegan cheeses, this step is often simulated using cultured nuts (fermenting cashews with live bacteria cultures) or by adding flavorings like miso or yeast extracts to mimic that aged profile.

  1. The Structural Matrix

At a chemical level, cheese is an emulsion and a colloid.

It is a network where fat globules are suspended in a continuous protein matrix.

When you eat dairy cheese, your saliva and body heat melt the fat and break the protein bonds.

When you eat a cashew "cheese," the structure is held together by the natural oils in the nut and the gelatinization of any added starches or gums, aiming to replicate that same melting or spreading behavior.

Summary: What defines it?

If you strip away the cultural association with cows, "cheese" is simply:

A base (milk, nuts, soy, coconuts).

A flocculation agent (acid, enzyme, or mechanical separation) to create solids.

A flavor development phase (fermentation, aging, or curing).

A texture modifier to achieve a specific mouthfeel.

So, a cashew block fermented with lactic acid bacteria and salted is technically functioning as cheese because it has undergone the same fundamental physical and biological transformations as a wheel of cheddar, just using different building blocks. It is a functional food category defined by texture and production method rather than strict ingredients.

Anyone want to test my android app for soccer coaches?

I posted a few weeks ago (in ask lemmy) about an android app I was working on. At the time I didn’t have a google play account, but I do now! They allow for internal testers. I thought maybe I'd got some better traffic here.

Well, my post got a little traffic in ask lemmy, but no one volunteered. Here’s the thing though. I can’t find the issues, or crappy workflows, I need someone else to put eyeballs on it. I’m not a big company so I can’t offer much, but I can offer a free copy of the app if that’s a selling point.

Anyway, I’m going to take a real big leap here and just toss the link for testing out in the open.

Does anyone here coach youth soccer and would be interested in trying my android app I'm working on?

Basically subject. I've been following my kid through two clubs over the last few years and there are just a few tools I think the coaches are lacking. One is drill and plan organization, the other is wellness before games (data science). I've been working on an android app for a while now and it's just about to the point where I need coaches to tell me what's wrong with it, or what they like about it.

I don't want to post any links so I can't get called out for advertising, but if you are interested in helping just reply and I'll message you directly. I did get my google developer account approved though I haven't posted a release build yet. There are still a few small issues I need to fix first.

Slate truck question

I have a preorder for one. And I've been debating the best solution for a "stereo" Right now I'm literally thinking just a Bluetooth speaker that supports multiple devices so the other two drivers in the family can also use it.

But is there anything more interesting? Like a tablet with a simple card providing wifi hotspot maybe... Or a modified steamdeck with a controller kind of thing. I'd love some creatice ideas

Hairpin dns issue

I've got Immich working great on Unraid, but if I'm on my network I can't really use it. Just fails to resolve the dns. I looked it up and it's that my router doesn't support hairpin or something. It's a Aginet hb810. I found a workaround in the Immich client where you can add a second entry that's network specific, but it doesn't seem to work very reliably.

What are my options?

Bought a Refurbished pixel10 pro, unlocked but it isn't.

Finally decided to give GrapheneOS a try as I've got a fp6 with /e/os and love it.

Found an eBay listing for one in very good condition, and right in the subject it says unlocked. Got it yesterday, excited to try it. Start following the install instructions, only to see OEM unlock grayed out. One article says, it must be connected to the internet, so I connect it to wifi. Still grayed out. Another article says install all the updates and reboot. Two hours later, still grayed out. I've measaged the seller asking for a refund, but I don't know. Anyone else have an idea?

Any wallet apps that work?

My local transit only uses Google wallet for tap to pay, but I've got about 90% of my stuff out of Google. Paypal used to install as a wallet but doesn't seem to do tap to pay. And since the latest /e/os update, can't even select it anymore. I'm not in the EU so can't use wero.

Any other options I haven't found maybe?

That was a recurring sentiment expressed on a rainy afternoon by Street Roots vendors emerging fresh from a shower and wearing clothes they just washed in the building’s laundry room.

The basement floor houses Street Roots’ new shower and laundry facilities, offering appointments for showers and a wash and dry laundry service.

For vendor Lore Wilson, using the facilities offered some reprieve from the experience of living outside.

“It restores a massive amount of personal dignity, self-esteem and confidence to have a shower and clean clothes,” Wilson said. “Having my basic needs so considerately cared for, with so much kindness and compassion — to have my humanity recognized in such a way — is a good reminder that I am not less than.”

Fairphone 6 available in USA again

Just got a marketing email from Murena and they are advertising the FP6 in the USA with a $60 discount. I bought one when they first went on sale in the usa and I love it. You can run AOSP android or /e/os on it. I'm running /e/os with the fossify launcher and it's pretty great. Battery life is probably the best part though, I can easily make it 3 days without charging.

Has anyone sold or otherwise handed off their 3d printing business?

I think I'm done, hit my mental energy limit. I have a very small 3d design company, where I started by taking small projects, making the design and then selling it on either Etsy or Artisans coop. I'd also attend local craft fairs, or makers markets.

I've had a lot of fun and satisfaction doing this, solved some cool problems for people and made a small amount of money. (Mostly just paid for the printers)

But, the last three craft fairs I've attended I sold literally nothing at one, and only a few dollars at the others, Etsy sales have dried up and Artisans coop never got off the ground for me. I know I need to market, but I've been doing it without Meta/deadbird etc which is so tough.

So I think I'm done and just want a way out.

If anyone either has advice on how to sell this company (its an LLC) or if you are even interested in buying it, maybe DM me. I've got tons if filament, a pair of nice printers, probably a few dozen 3d designs plus a bunch of replacement parts for the printers. PrusaXL2T and Vivedino Troodon300 heavily modded.

Are there any Steam games like Gran Turismo?

I mean that has licensed tracks and cars that you can modify in stupid fun ways? The last time I played Gran Tuismo was on a PS3 and I played it so much.

I have purchased a few games over the years, Project cars 1-3, Asetto corsa, Forza Horizon, The Crew 2.... all of them were interesting in some ways, but I just miss grabbing a boring car and modding it to stupid power levels and racing it at Laguna seca for example.

It's me again. Made this and need to plant something in it

I made this planter (<- imgur gallery) to sell at a pair of craft fairs I'm attending this month and next. I needed something small enough I could fit a few of them on the 6 foot table. I can make them in any color but I love how the black and white turned out.

I would like to have one with a plant in it to showcase it on the table and was hoping you all would have some suggestions (this community always has great suggestions!)

It's about 4 inches tall and 6 inches wide.

Framework 16 fan noise

I know pre launch there were issues with the fan noise. I've just bought a 16 and it hits 71db when playing cyberpunk, and still 70 when playing rimworld. I've reached out to support and they didn't have much to offer, (reset bios to defaults, disassemble and ensure nothing stuck in the fan.)

It's virtually silent at idle and even when gaming on battery it's not very loud. Has anyone figured out a better fan solution?

EDIT: I've discovered the project fw-fanctrl. I made a custom profile that doesn't do much until the cpu hits higher temps then ramps to max much later. Will see how that works. I might post my profile if it works well enough.

EDIT2: It occurred to me, some of you all might be interested in what I did. Here is the step by step I think. I'm on Fedora 42 so you might need to do something more for your OS and I might have missed a step in my notes. I added a profile that doesn't do much until 75C and ramps to 100% at 95C. I just played a game of Beyond all reason and I'm pretty sure it never got to 85C even.

First clone the repo:

sudo ./install.sh

Just a couple checks to see if it's doing what we think:

systemctl status fw-fanctrl

Can leave this running to see any output:

journalctl -u fw-fanctrl -f

Now, find the fw-fanctrl config.json, mine was here in /etc

sudo nano /etc/fw-fanctrl/config.json

Add this section to the json (Be sure you're comma's and brackets match!)
