Where to buy Keycaps
Drop is pretty good, I got my first set (MiTo DCD Pegaso) and it was excellent quality. I got my recent set off of Keyspensory and the quality is alright, and have two groupbuys coming in from Vala Supply and Mintlodica respectively. I'm hoping those will be pretty good, though my Vala Supply order has been delayed several months now.
Also keebs.gg is handy since it lists some of the more popular keyboard sites. I've heard people have issues with Kono and occasionally kdbfans (not listed on the site) just as a note.

How do you store your switches?
I have the strawberry milk container from Dangkeebs and recently got a Skadis board from IKEA, so I'm able to store switches in the hookable clear containers so they can be on display.

Brand New to Keyboards, Trying to Find a Decent Catalogue
So https://shopmech.com/ has a keyboard builder you can try out. They pull from a lot of the popular sites but it doesn't have everything. Alternatively you can try keeb.gg, there's no builder but personally I find the layout easier to use.
For switches I think switches.mx is exactly what your looking for. The only downside is that you can't sort, but the travel distance is outright a column so at least you can get that info pretty easily.
