They might put a million satellites into orbit, but they're certainly not going to be orbital data centers. At least not as we currently understand data centers. The idea that space is cold and therefore a great place to put data centers that get hot is the idea of a stoned moron talking out of their ass. Space is a vacuum, you know what else is a vacuum, the part of your portable coffee mug that keeps your beverage warm or cold for ages, because vacuum is a crazy good insulator. Just because space is cold doesn't mean the heat from an orbital data center can dissipate into it. This dumb idea is never going to happen unless data canter technology improves to the point where they aren't environmental disasters anymore.

Something has gone awry

unless you pitched a shit load of infecting bugs (like your dog barfed into the fermentor or something) there's no way an infection would show up so dramatically after just 16 hours. Sounds like your yeast is just really happy and filling your headspace up with foam.

Probably n00b Question - Mead Brewing

That's fine. The old advice for racking off the yeast is because that's what the big professional brewers/winemakers do. The difference being yeast sitting on the bottom of 5 gallons of beer/wine vs yeast sitting on the bottom of 100,000 bbls. The massive weight crushes the yeast and then lets some undesirable flavors into the beverage. At the homebrew scale this just doesn't happen.

The only thing to be wary of without racking off the yeast is that it's easy to stir a bunch of the sediment back up if your racking cane moves around during bottling.

Chicha 🇸🇻

I've always heard this drink called Tepache.

My understanding of Chicha is that it is a corn/maize based fermented beverage and the starches in the corn are traditionally converted to sugars by chewing the corn and spitting it out, human saliva contains amylase enzymes which converts the starch. Modern versions of the beverage can be made with malted corn if you don't wanna drink fermented spit.

What are you brewing?

I brewed a bock and some wild yeast saison last month (combined mash, separate boils). I mashed way too hot and underpitched the lager yeast so the bock is kinda stuck with way too high a FG. The saison has been slowly plugging away as the yeast is (likely) diastaticus so it should at least eventually finish...
