I'm late to the thread, and there are already some real highlights mentioned so I'll just add some that are criminal ly missing:
Azumanga Daioh is forever the GOAT.

I love nichijou and asobi asobase. If Manga is your thing Yokohama Kaidashi Kikou is the GOAT
Nichijo is the only correct answer.
Other than absolute masterpieces already listed by other users. These are some that I have rewatched and can think of.
YuruYuri is such a feel good and friendly anime and manga.
Just follows the life of the various girls in the tea club and some of their friends.

I've heard yuru camp is great and I've been meaning to watch it. I did start reading the manga for it recently.
My favorite genre! SoL often crosses into other genres, so my answer would probably vary depending on how open we can be!
On the Romance side there's just sooo many I love- My Dress-Up Darling, A Sign of Affection, Horimiya, You and I are Polar Opposites.
For music - K-On and most definitely Sound Euphonium (in my top 3 all time)
Topic-based- DIY, Ruri Rocks, Yuru Camp, New Game
General randomess - Saiki K, YuruYuri
If I had to pick just one it would be Sound Euphonium. Absolutely beautiful series 🎵
