OnePlus 7 Pro owner here. Currently running the Pixel Experience ROM. Pretty stable. Although I haven't really tried NFC as there no use for it where I live. You can check out the xda thread.

I usually prefer F-Droid releases over Play Store releases. As for which has the fastest updates, depends on which store processes the latest release earlier. F-droid can directly pull code from the Git repository and build it from source. And from the F-Droid version description for Jerboa, it is built from source by F-Droid.
