fwiw i’ve gone back and forth in the hue bridge. started out with it, got rid of it, and then added it back. was having some Zigbee issues so went back.

given that you can restrict internet to the hub apart from the very negligible power it takes no reason to get rid of it IMO.

yeah i have some bulbs through the hubs and some on the zigbee stick. for awhile actually had all of them on the zigbee stick but things were slowing down, so moved back. Been using HA for a long time now and IMO there’s no bad option from a setup perspective with hue.
