This type of Vietnamese cuisine is some of the best summer food. Completely agree!

Bowls are so underrated. This one looks like a nice composition. What sauce did you make for it?

I used this Nuoc cham recipe:

  • 4 1/2 tbsp white sugar
  • 4 1/2 tbsp fish sauce
  • 3 tbsp rice wine vinegar
  • 3 tbsp lime juice
  • 1/2 cup water
  • 2 birds eye chilli or Thai chilli finely chopped
  • 5 cloves garlic, finely chopped

Directions

  1. Add all of the liquids into a sauce pan.
  2. Heat on low and add the sugar. (Can use high heat but just be careful not to boil it too much)
  3. Continue heating and stirring until the sugar dissolves.
  4. Turn off heat. Add chilli and garlic.

This recipe makes a nice nuoc cham that has a kick to it. If you can't handle spicy reduce to 1 birds eye chilli and discard the seeds.
