The only way I recognize that I'm dreaming is that the characters in my dreams don't usually have knowledge of things "off screen". Like what's behind a door or something. But now that I've said it out loud, I'm sure my brain will patch that.
Same, though oftentimes there'll be some logical inconsistency that makes me realize, like I'm naked waiting for the bus and I juuuust manage to think clearly enough that I realize it's an absurd situation that would never happen.
I'm not sure if I actually accept the premise, but I'll stab at it anyways.
There are some parts of our brains that seem to handle certain specific visual cognitive tasks. Apparently recognizing faces is one?
Letters and hands I think occupy a similar niche in that we are very unforgiving of incorrectness. I expect hands because of the importance of communication (similarity to the whites of our eyes), and letters because we're so trained to read that it's very hard to ignore or forgive errors there.
It might not be that AI is actually especially bad at letters and hands... it might be that our brains are hard wired to be exceptionally critical of letters and hands. AI famously lights scenes impossibly, but most people don't notice.
As for dreams, I think if you think about hands and letters both encoding salient information even "at idle"... generating what that information ought to be in the context of a dream might be challenging.
So, hands and letters just might be cursed with having very human-centric meanings for correctness that we are highly attuned to, so generating these things bears an exceptionally high burden. Brain avoids it in dreams and ai struggles too.
My dreams do both well. I have had dreams where I’m trying to draw people or a statue. Sometimes my dreams feel like real life and I end up scrolling memes or news on my phone that don’t make the most sense but look real.
What makes me realize I’m dreaming is when I realize something doesn’t make logical sense OR something good happens to me and I think “well this must be a dream” lol
I've often dreamed about reading some text messages or text over some other form of media. It's always perfectly legible to me, but if I ever go back to reread, it's a different thing.
I don't think hands were weirdly formed in any of my dreams either.

When made into a thumbnail, that silhouette of a man's head and hands is creepy as shit.
Lol yeah, it's the "I just can't prove it" meme from Dexter.
I hate how good AI is at this kind of visual trickery because I absolutely love the kind of craftwork required when made by human minds and hands.
The thumbnail makes this look like a human face. The ear is the red splotch on the right and the eye is the guy in white's head.
just a guy behind a steering wheel.
I don't have the gibberish text thing in dreams that everyone seems to talk about though. So that wouldn't work for me.
But I've been lucid dreaming every now and then all my life, and it isn't on purpose, it's just a spontaneous realization that occasionally happens.

Also.. AI isn't bad at it any more, only cheapo models struggle noticeably with it.

Sometimes my brain gives me a "dream camera" once I've realized I'm dreaming. What I'd give to have that film developed...
I've experienced this before too. It's often a good tell that I'm in a dream when something on a screen doesn't make sense (or the UI is ridiculous).
You ever notice that we're glued to our phones but never dream about them? Perhaps this is another contextual clue.
