I’m curious… what makes liege waffle a liege waffle?

Liege waffles are made from Brioche (yeasted & risen), so the dough is very dense and they have pearl sugar mixed in which gives them a delightful crunch while you eat them! Apparently you don't normally add toppings, but maple syrup is too delicious for me to worry about the mild anachronism.

pretty sure maple syrup makes everything better, so I don't think anyone is going to mind.

In any belgain-style (big squares) waffle maker, yeah. Don't work very well in the smaller size waffle makers. Highly recommend trying it! They freeze and reheat in a toaster super well, too.

Best eaten warm, very "chewy" compared to the airy crunchiness of brussels waffles.
