pumpkin soup

1 medium onion, chopped
2 garlic cloves, minced
half of a roasted pumpkin (about 5 large cups), mashed
5 cups chicken broth
1 teaspoon cinnamon
half teaspoon nutmeg
half teaspoon ground ginger
half teaspoon salt
quarter teaspoon pepper
1 cup heavy cream
- Sweat the onion in a bit of oil for 2-3 minutes.
- Add garlic, cook 1 minute.
- Add pumpkin, mix well.
- Pour in chicken broth.
- Add all the spices and salt.
- Simmer for 20 minutes on medium heat.
- Blend with immersion blender until smooth.
- Stir in heavy cream, simmer 1 more minute.
- Adjust seasoning to taste.
To serve, drizzle a bit of heavy cream, some drops of pumpkin seed oil, roasted pumpkin seeds, and some ground nutmeg.
I like the idea that some dish out there might be made of almost entirely one ingredient. Like... pureed pumpkin soup, topped with pumpkin seeds, pumpkin oil, toasted pumpkin rind shavings, and garnished with pumpkin vine greens and pumpkin root flakes. Salt and pepper to taste.
Those are edible?

Altho of course, always triple-dog check before 'doing the deed.'
But yeah, all kinds of possibilities, there. Even humble dandelions are quite nutritious.
