Is there a way set the default language for my posts and comments?
I've tried setting this option in account settings but I still get asked for every post and comment. The drop-down defaults to "Select Language" with "Undetermined" and "English" as the options within.

My settings are, as OP states, drop-down defaults to “Select Language” with “Undetermined” and “English”. And still I get posts in languages I don't know — not lots, but obviously they're useless to me, and I'd prefer blocking such posts.
For me, English is the default.
If settings does not work for you, try an app like Memmy: https://apps.apple.com/au/app/memmy-for-lemmy/id6450204299
