Ditched all non-stick and have exclusively stainless steel cookware now. Interested in carbon steel. Are premium brands worth it or is it all the same? Any brand recs?

I recently learned some of the NYC Wireguard servers are 1gbps, tested it out and turned out to be true. Any other tricks like this to know/locations that are faster than others?
