You COULD use a casting client and server, but it's probably much easier to just use the tablet as a Bluetooth target. Some phones/tablets just do this, but there's also simple free apps out there that enable this as well.

Kanji is a derivative of older Mandarin character sets. That's why they look alike. Modern Kanji is of course dissimilar, but the glyphs still look similar, so unless you know one or the other deeply, I wouldn't find it odd for people unfamiliar with either to be able to tell some of them apart.
The example characters you've provided do look fairly similar to me, though I'm somewhat familiar with Kanji and can normally tell the difference.

The only application I see for this is AI-based bullshit, which makes this needlessly complicated.
Static scripts don't get "confused", and they certainly don't get manipulated on a properly secured system. Why would you need an extra layer of security past the layers that already exist, when just properly securing the existing layers should be more than enough?

Having been in the app store development community for a decade, this isn't honestly the WORST thing. So much malware gets pushed now it's a fucking gha-tto. This isn't the worst thing to combat, though I believe there should be a FREE tier for Open Source or otherwise community-driven apps to be released on with zero barriers - AGAIN, oenisn game sort of verification which could be cheap, reliable and FREE.

That's quite a temperature swing. I'd also note that Capsicum Chinense family likes more dry conditions, whereas the Annuum (Thai) are used to more humid and wet environments. Probably why that one looks healthier.
General rule of thumb: thin skin peppers like dry, and thicker skinner peppers like more water. If you try to grow Bell peppers next to Aji peppers in the exact same soil conditions, one will over overwatered, and one will be underwatered, if that helps illustrate the difference.

If you're looking for something hosted, ProtonDocs is fine, however you'll need an account for each collaborator which could get expensive.
Lots of mentions of HedgeDoc, but it's only for Markdown.
Collabora sounds more in line with what you're looking for. Nextcloud Office might be a bit lacking.
