I am attempting to get into Selfhosting after a shockingly frightening experience, but I am very lost.

Wizards of the Coast denies, then confirms, that Magic: The Gathering promo art features AI elements | When will companies learn?
I had to step away from Magic and Wizards after the Pinkerton incident, and everything they’ve been doing since just affirms how shitty a company they are.
I didn’t bud light the cards I already own, and I still occasionally play with friends, but I haven’t spent a dime on MtG since, and I may never again.
In the grand scheme of things it means shit. Capitalism gonna capitalism, and ultimately, nearly all capitalist companies are shit. I couldn’t function in this society if I stopped using or spending money with every reprehensible company.
But with Wizards, I felt, “you know what, I just can’t do this anymore.”

Major 4-day workweek study suggests that when we work 5 days we spend one doing basically nothing
How is this a surprise? The detachment people have from the reality “on the ground” is infuriating. Try working a job you hate for shit pay for 71% of your entire fucking week and then just bounce into a weekend (assuming you even get two days off in a row) with all the energy to “do stuff”.
ffs. Assholes.

How much data are your GPU drivers collecting about you? Quite a lot in Intel's case

Let’s be fair. Apple doesn’t do this quite so blatantly and egregiously, but they do it. They collect plenty of telemetry, and it’s getting harder to opt-out of/block it with their own chipsets.
Edit: I say this as an Apple user.

What can the 'average Joe' start hosting, that will change their life?
The one that was lifechanging for me is audiobookshelf. I LOVE having full ownership and control over all of my audiobooks, and the ability to enjoy them on any device I choose.

Which OS do you use for your homeserver?
Ubuntu LTS, with all my services in Docker containers.
I know Ubuntu gets a lot of (deserved) hate for some of the shit Canonical pulls, but for now, I like Ubuntu and it works for me.
When I rebuilt my server at the beginning of the month, I was gonna jump to Debian, but my god the Debian website is obtuse. After looking at the site and trying to determine what to download to get Debian with non-free (I’m unfortunately working with an NVIDIA card), I decided to go with Ubuntu. I needed a smooth rebuild process and with Ubuntu I know exactly what I’ll get when I download the LTS server.
Edit: grammar

Absolutely this. Plus I want nothing to do with any kind of car that collects data on me, requires any kind of subscription, or has any kind of screen.
I’m no Luddite, but fuck the enshittification of cars. Combustion engines are a huge problem, but fuck these new cars. Electric or otherwise
