For most stuff wine is working better than on Windows. Thats why people actually import wine drivers to their real Windows install

You can’t really disable rgb but you can set brightness with openrgb to 0. Also you could try to disable igpu in bios

I used postmarket os in past and I can recommend it… it has terminal for people who want to tinker with it but it can be used without terminal. Os is very easy to use and supports many devices, their support channels are hosted on matrix

Definitely not bazzaite, it has lots of unremovable bloatware and since it doesn't have native package manager it will be a problem. For gaming i propose cachyos, it focuses a lot on performance in games. They have their own proton, kernel and they even had their own browser
