Is it possible to 'follow' users?
Is it possible to 'follow'or subscribe to individual Lemmy users so I can see their posts on my subscribed feed?

In Lemmy, nop. However, as it's the Fediverse, you can follow users via Mastodon, any user. (I'm following myself)
The posts however don't seem to pop-up on mastodon, but you can select the user profile and read all their posts. That is however not limited to the subscribed channels, as you follow a user, not a community or magazine.
I think it would be a huge strain on the network is that's synced as well. (Especially with the huge growth after the (small) Reddit exodus.
