Just finished making soup for lunch. If you are looking for ways to eat more healthy vegetables, I suggest this soup recipe. Quick, easy, and surprisingly tasty!

  • 150g broccoli (stems work great)
  • 1 medium white onion
  • 125g zucchini
  • 200g spinach
  • 500ml chicken or veggie broth
  • 1 tsp dijon mustard
  • 1 tbsp olive oil
  1. chop the broccoli, onion, and zucchini into small pieces
  2. heat the oil over low heat in a medium-large pot
  3. add the onions and broccoli and let them get tender, about 5-7 min
  4. add the zucchini, stir it in and let it go another 2 minutes
  5. add the broth and bring to a boil
  6. put a lid on and simmer for 12 minutes
  7. add the spinach and put the lid back on for 2-3 more minutes
  8. remove from heat and add the dijon mustard
  9. using an immersion blender to puree it into a smooth velvet texture and uniform color

Serve in a bowl or big mug with a side of toasted crusty bread and enjoy!
