Ricotta dumplings

Ricotta dumplings and tomatoes. They turned out slightly less dense than I wanted but still very good. Next time less egg or more flour.

The sauce is olive oil, tomatoes, salt and basil. It requires bright acidic tomatoes you can't buy in stores. These came from my garden.

Dumpling. Mix ricotta, flour, Parm, egg, salt and drop tablespoons of it into boiling water. Take them out when they float. Add sauce.

Ravioli are dumplings but these are definitely not ravioli. As you say, drop dumplings.
