For decades, we were told to choose low-fat dairy. New research says otherwise
Full-fat dairy may be healthier than conventional advice has suggested. In a 12-week study, adults who ate three servings a day showed no meaningful increases in weight, body fat, cholesterol, or insulin resistance. They also experienced improved blood pressure and consumed more calcium, protein, and vitamin D. The findings suggest dairy’s complex structure may matter more than its saturated fat content alone.

Here's a study from like a decade ago pointing out not all fat is the same:

And here's a NYT article from 20+ years ago saying experts aren't really sure all fat is bad.

We need fat, "pioneers" would literally get "rabbit starvation" because if that's the only source of protein, it doesn't come with enough animal fat to support a human body, and they couldn't just buy junk food at the 7/11.
That doesn't mean we need to eat junk food, or can just substitute one kind of fat for another and act like it's fine. It means on the short list of things we need to consume, one of them is legitimately fat.
That also doesn't mean idiots eating only steak and butter are healthy either. If too much water can kill someone, obviously too much fat can be bad too.
I wonder how cream to milk stacks up.
The cream rises to the top
