Not many people know this, but cheese is already plural. The singular form is choose.

Joking aside, you're making me think. Is this like the fish situation, where as long as it's the same species or general "fish" it stays singular, but if you're talking about multiple species specifically then it's fishes?

I feel like cheeses is the correct form here since it is actually several different kinds of cheese.

I was on a bus with a bunch of deaf people signing to each other. The only sound they made was laughing to each other's jokes like no one was listening. It was wholesome. Meanwhile in non-deaf world, we stifle our happiness and fight to hold back giggle fits in case someone gets upset for causing a ruckus.
