Is there a way I can demonstrate ability to read?
This happens in conversations, where people are unsure if I have basic ability to read. I read fairly regularly throughout my life, and believe I'm able to. Is there a way to test & demonstrate whether I'm actually capable of reading, or if I'm e.g. reading without realizing that I'm not actually comprehending it?

People ask you if you can read? In a serious conversation, not like, "yes we're open, can't you read the fucking sign?"? I think you just say, "yes."

Are you sure other people are questioning your ability to read? Why do you think this is happening?

Maybe they have a really nice voice and someone is trying to get them to narrate an audiobook for free.
Yes. I think it's gaslighting. I'm often forced to engage with gaslighting.
Have you tried writing them a text? Being able to write without being able to read would be weird af if it was even possible.
Technically, one can listen to text and use dictation, so a person not knowing a single letter could perfectly understand and send texts on a smartphone or a computer.
But honestly, how does one get into a situation where they need to prove they can read? I think OP is in second grade and wants to cheat the test.
Talk to people about books you've read
I'm reading "The Application of Mindfulness of the Sacred Dharma", from the Tibetan Buddhist canon. It's very long, with sustained repetitive sections, like a multi-day hike. I'm close to the last chapter, and have been reading for over a year I think. It's both extremely interesting and boring to me. I was suggested it from a quote where male-homosexuality is considered wrong in Buddhism, though overall it seems like an argument for male-homosexuality. There's a lot of discouragement against men having any attraction in women, and it repeatedly argues in favor of the male sex over female. My favorite relationship so far is between the king of the Yāma heaven, Musulundha, and the king swan of the Yāma heaven, Auspicious Time; both give Dharma talks to the gods there.
Ask them about the books they've read, and see if you can find one you have both read
