IIRC in usual latin grammar the verb would be at the end. So I think it should be "ego celeritas sum".

The word order in latin is pretty loose. I’d probably say Celeritas sum to make it similar to Cogito ergo sum. However, like other romance languages you don’t need the subject. You can just say Am speed and the declensions tell you who is the subject. Saying ego a lot, just like saying yo in spanish a lot, can make you seem egotistical.
