Are Small open source local non-US models ok to use for idea boncing, story boarding, roleplay etc?

Please feel free to roast me on this i hate AI art, music and the US tech firms with a pasión but i feel from the bits ive used the smaller open sourced ones have been fun for role playing and boncing ideas off.

I am obvs conflicted i do love tech...but the state of it is horrible (not just AI social media etc too), and AI art and novels are clearly abhorant of imitations of true human creativity.

Wanted to ask this hear as i know no one will menice thier words, and i need hoensty, before i go and buy a AI Dungeon sub or somthing.
