I regret not making my own tortillas for it, or at least going to the panaderia to get some. I hate these paper thin store bought ones. But the menudo was good.
This was from a few months ago, so I'd have to dig up the recipe. It's not something I make often so I haven't built up the courage to wing it on my own.
It's kind of similar to the consomme in a way. But then you add beef tripe and hominy and other stuff and make it into a soup. I eat tortillas with everything.
