An old leather belt and some stropping compound off Amazon to polish the edge from time to time really extends the life of the edge.

This is a skill that is easy to learn but almost impossible to master in my experience. I can get a knife pretty sharp...but I can never get them "perfectly" sharp

What kind of set you use? I've had a whetstone but got tired of it cause it takes a while to set up and soak, and it was hard to make a good edge on my curved kitchen knives.

Now I use a 3 stage coarseness "drag the blade through the V groove" sharpener, usually only use the 2 finer settings, but it seems to wear out and get a less fine edge over time.

I have the Lansky 5 stone system. I like it because it gets the angles right with little fuss and without breaking the bank. You can buy a stand to hold it up on, but I've been satisfied just using a squeeze clamp to hold the included Lansky knife clamp to the counter top.
