Nah the pigeon is cooked in a pan along with this really thick and savory herbal sauce

Looks like chicken mole. Hope to try it sometime (maybe at a more simple restaurant).

For something as common as “poultry in sauce” it sure looks like an industrial accident.

Tried pigeon in Chicago's Chinatown. It was the gamiest thing I have ever tasted. I normally like gamiey meat but this was too much.
