Homekit device on other subnet?

So the home app supports adding an other home to the configuration e.g. a vacation residence. This implies devices on an entire other location with a high probability of being connected to an other subnet (due to an other ISP connection etc.), which apple does not support.

One can't just connect another homekit-compatible hub to a hotel wifi and try adding it to the Home app, which I would love to do!

Am I missing out on something?
