Is there a way to either re-order or remove an instance in the list?
Specifically, I would like to move lemmy.world lower down the list as it's not my main instance. Not sure if this is something that can be done at present or not?

Having read the discussion here, I've added some help text to the accounts screen that might help people with these kinds of issues. Should be in the next build.

I didn't see a way to re-order them per se, but as a work-around I removed my accounts and re-added them in a different order.
Yeah. Maybe something to request as a feature? Not too sure how much people would appreciate having this
Settings > Accounts > click and hold on the instance name > Remove instance

And when you want to open with another instanse as default, select inbox (bell top left) and select the account of the instance you want the app to open with.
Oh that's nice. Maybe this should be madr a bit more obvious. I would have never known selecting an instance there would select my default
Same, I just was looking for my inbox, as the 1st account I registered was .ml (which was the default here) I was amazed when I opened the app and started on .world .
It's not intuitive though, so I placed a remark in !liftoff
I would love a way to reorder them without deleting.
