Recently bought a 13 pro max for the cameras and IS - is there anyway to tone down the excessive digital sharpening?
The only way to avoid it is using third party camera apps or shooting in Apple pro-raw with the native camera, that way the effects are not as aggressive.

Do you use it in windows or just apple devices? If so, does it give you any pain using it outside the apple ecosystem?
