can someone explain keycap profiles to me?

You might have seen this image (or similar):

The normal keyboard should have a flat PCB and the variation in height entirely based on the cap profile. Some profiles will have interchangeable keys, e.g. XDA you can swap the keys to any row except the first row while OEM you can't really swap keys between rows or they'll stick out.

As far as I know, you can use any profile on any board (provided the keycaps are compatible with the switch stems).

Hopefully that helps answer your question.

I bought a cheap set of transparent keys and I'll see how that goes. Seems to be difficult to find cheap XDA profile keycaps or I'm not good at searching.

First time using 40% so didn't want to put too much money into it anyway, just in case I hated it.

Favorite Bluetooth keyboard?

When I have to go into the office I'll use a Keychron K6 (the older non pro model) with silent switches.

Battery life is great (several days) and having 3 Bluetooth profiles makes it easy to switch between devices with a key combo.

Mine has the aluminium frame which is, I guess, good for durability as I just chuck it in my bag.

It's a 65% which is small enough for travel (in my opinion) but large enough to have most of the keys I often use.

My next biggest is a K2 Pro which is a 75% - I would say that is slightly too large for travel.
