is it possible to define a color for this AccentColor?
I would like to change this preference to something like this:
AccentColor: red !important;
but don't work.

I'm not sure if remember right, but yes you can remap various css system color like
AccentColorby creating a string prefui.accentcolorand giving it value in hex format like#ff0000. Maybe rgb format also works I dunno.But of course if you do that then it will change everywhere in chrome and in web pages as well.
thanks, I will try.
