I'd just recommend a bright, cheerful game that requires little to zero reading and keeps to simple mechanics: New Super Mario Bros games, Mario 3D World, Mario Wonder, Yoshi's Wooly/Crafted World, DK Tropical Freeze, Kirby Star Allies (Forgotten Land might be a bit more difficult or "dark" in tone for a toddler). You might find some good games that work on the eShop too.
I don't know about toddlers but SwitchUp on youtube has had a "Kids Pick of the Week" segment on their weekly sale videos for quite a while now. Maybe check that out.

My daughter is 3 almost 4 and she loves playing Mario cart.
Switch games aren’t designed for toddlers, by and large.
Definitely. He really wants to play something with his older brother and is feeling left out.
Mario Galaxy and Oddysey to a lesser extent has a "2" player where the second player isn't going to get in the way but still is a part of the game!
