I think there's a clear difference between Belgian mayo vs anywhere else in the world.

The most spicy available, usually samourai but my local friture has a lovely special spicy american sauce

I got introduced to that while I was over there and I love it. Samouraj sauce is the bomb.

Sorry to that one guy who posted about using some kind of vinegar on his fries but lemmy.world had to roll back and we lost 30 minutes of comments/posts.

If I had to rank them:

  2. Tomato ketchup

  3. Béarnaise sauce

  4. Tartar sauce (which is actually based on mayonaise)

I have to admit I really like joppie sauce when I'm going for fries, but I regularly switch it up depending on what I'm looking for, so regular ketchup, samurai or andalouse all get their share.

I mean, look into the insane amount of sauces available. Even if you say it can't be beat you could try them all and discover things you can add to what you already like. Most Belgians don't just stick to one sauce.

Recently, I've discovered gravy and cheese curds, courtesy of our (USA) lovely northern neighbors. Seriously, poutine is fuckin' bangin'!

Mayo, though I've dabbled in ketchup and curry ketchup as well, especially mixed with mayo.

Unless it's friet stoofvlees, the only acceptable answer is mayo.

But you haven't tried "frit special" yet - Mayo/Ketchup/Onion?

I love it.

Interestingly it tastes much better like this than a Single premixed sauce made from mayo and ketchup.
