(Kinda) omu rice
Pork and garlic fried rice with a textured scrambled egg and some sriracha over the top. Almost omu rice, but I don't like ketchup and I'd rather texture my egg scramble a bit than make it flat to wrap around the rice the way they do in Japanese cafes.

She was terrified of the kitchen when I first got her. I joke about calling her a begging machine, but honestly I'm stoked that she's gotten comfortable enough to brave the scary kitchen and help me taste-test while I'm cooking
It's good she has a loving home with a friend who obviously cares enough to cook extra for her!

You can do demiglace instead of the ketchup as well; the ketchup version is usually the cheaper/easier one. I'd definitely eat what you made there.

I am sorry to hear that :( I think feel where you're coming from though. It hurts so much when they leave that its too painful to ever get another dog again, but they leave a dog shaped hole in your life. Cheers to you and your hopefully soon to be new pup(s)!
I also moved during that time so that had some to do with it. We might go check out the shelter this weekend though.
Is there an easy way to wrap the egg around the rice?
If you cook the egg in a frying pan until it's completely set, you can put the rice straight into the pan on top of the egg and then kinda roll the pan over as you're sliding the egg onto your plate. It still takes a bit of technique, but imo its easier to do than the method I've seen online where you wrap the egg around the already plated rice. This all assumes your egg is flat and entirely covers the surface of your pan, rather than the textured egg pictured here
