the lima beans are soaked and precooked lima beans in the pressure cooker (just 1 min natural release) baked with carrots, celery, onion, garlic, cubed potatoes, white wine, dill, rosemary, oregano and then at the end I added lemon juice. I don't really write or follow written recipes.
Hey I made basically this last night. "Shepherds pie" with tofu and veg. Lima beans are one of our favorite veggies. Probably making succotash tonight, I hope (if we have enough peppers left in the garden.)
