Clarified watermelon tequila drink

Ok so my garden is basically a watermelon patch right now, so I was interested in this as it uses one whole mini watermelon, but this says the juice lasts one day, the drink once clarified lasts months.

I guess I could freeze the rest, or simply make less, or since the final version keeps well, make more of that - but why does the recipe say to make so much more of the watermelon juice than one would use, if it doesn't keep?

Has anyone on here done milk clarifying, is it very fussy?

Well, I made it. Doubled the recipe but it didn't yield twice as much as I am apparently not as good at clarifying. But it is good, maybe just a little too tart, and does look like the picture in the article. Certainly smooths out the tequila flavor - maybe more than I would like, actually. But will be nice to have such an interesting drink on hand, I was able to bottle a liter on top of today's drinks.

It says it's for seven servings, which seems an odd amount. Perhaps it's too much hassle to be worth making less?

Probably because that is what the author did, in developing this drink, and those are the measurements they had.

Also, I don't see why it wouldn't keep for more than 1 day, assuming you refrigerated it. Some people are overly cautious about that sort of thing.
