M6 supports up to 32GB of unified memory

That's not great. And the M5 Ultra is only for the ultra-rich.

The m5 max is pretty good for ai but one can also buy the framework desktop that should be pretty.great too

The Framework will be slower than the Mac because it only has about a quarter of the memory bandwidth. But it can hold bigger models in the 128GB version than the Mac. It's also really expensive, almost at Mac levels these days. Nothing is sanely priced any more and it's not fun.
