Help! Lime Recipe Ideas Needed!

I volunteer at a food bank, they give the volunteers food for our time. I was given a large bag of limes. I am looking for recipes to use them!

The only real recipes I have are for cilantro lime rice, and corn and lime salsa.

ETA: I am looking meal ideas more than desserts.

I love doing this, plus it helps keep away the scurvy. But I can only eat so many of them!

I like to serve raw veggies (cauliflower, carrots and cherry tomatoes being my usual go-to) with a squeeze of lime juice and red pepper flakes to top like a dressing

Lime cremas are good for topping a lot of Tex-Mex type dishes. 1-2 teaspoons of lime juice to 3 Tbsp of a vegan yogurt or sour cream. Speaking of Tex-Mex, I really like a squeeze of lime in black beans.

To really use up a good amount of limes, you could make some Indian-style lime pickles to go as a side for things https://holycowvegan.net/indian-lime-pickle/

Thank you! Some great suggestions. I forgot I used to make a lime cream sauce for tacos, I will have to find that and try it with vegan sour cream.

The Thai peanut sauce sounds great too.

Key Lime Pie (doesn't have to use Key Limes, it'll just be a bit more tart).

Cilantro Lime Chicken to go with the rice. (nvm didn't notice the comm; chicken substitute would work too tho)

Pico de gallo (also goes with the chicken and rice; won't use many limes tho)

Brazillian "lemonade" (it's made with limes not lemons so I don't know why they call it lemonade)

Anytime someone suggests a meat, just sub a meatless alt. Daring (the brand) chicken takes marinades beautifully

I do not do a lot of meat substitutes beyond soy curls and the occasional impossible/beyond burger to make Sloppy Josés (what we call vegan sloppy joes).

Fwiw, I'm originally Costa Rican and primarily know "limon" as lime. Thus, limonada is limes. There's also way more varieties of them in Central and South America than North America, which only really knows lime, lemon, and maybe keylime.

Juice them and freeze the juic in ice cube trays. Add to drinks, rice, curry, or salads whenever you need it.

Save the juice in ice cubes to use in water or cocktails, and use the peels to make oleo saccharum! (edit, sorry that's not a meal haha)

I also really like making coleslaw with lime, but make sure you add matchsticked radish to this recipe too too :)

If you want to just "cheese" the process, use them as you would lemons. Very close to them, not perfect, but if you're desperate to dump them, it's that. Or limenade for VERY hot days.

Damn that's crazy. If I didn't also volunteer at a soup kitchen I'd post on the neighbourhood apps announcing free limes to pickup, or go door to door asking. That much for one household is wild

Lime frosting for pastries, lime bars (like lemon bars, but lime). Salsa is usually what I end up making xD

Also if you get weird combinations of ingredients and need an idea of what to do with them, I built an app for that

I did the lime bars (not sure how to make them fully vegan though, and less sweet) I used extra limes and they still only used a few!

Egg substitutions that kinda work: chia gel, corn starch, flax meal

Thanks for the ideas for egg substitutes. I am only dabbling in vegan. I have been vegetarian for 12 years.

The bars I made do have eggs that I got from the food bank.

I'm mostly vegetarian, excepting family traditional meals and the very rare celebratory indulgence, but yeah it's hard to give up eggs. I've tried a few times and just can't get the recipes to behave how I want them to. So I just refuse to buy anything but pasture raised or free range eggs, often from a guy I know down the road.

I have been a vegetarian for 12 years this month. I am working towards vegan.

For years I got eggs from a friend who rescued some chickens and kept them as pets. She never really used the eggs, so I got them. But the neighbor's recently got into her yard and killed all of the chickens. So the only eggs I get these days is from the food bank.

Dry them in your oven to make cocktail garnishes. Slice them thin and consistent before putting them in the oven at low to dry them.
