I bought one game today and when I clicked "download", it installed a lot of stuff I really don't want. Is any of it optional?

Ugh, yeah it did the same thing to me lol. Since the games are DRM free you can just uninstall the software once you download them. But if you want to keep using the software and its features then I think you’d be better off keeping everything. Steam installs all the same stuff, fwiw, just without the shortcut spam

Thanks for clarifying, that’s really helpful. In that case I think I’ll zip up the spammy things until I need them again. I do that with other applications that I’m unlikely to use but don’t want to delete.

I'm not sure about MacOS but it installs gog galaxy by default on pc. It's not mandatory - if you log into the website, on your library page you can click on the game and get other download options that includes the game installer with no DRM

Do you mean it’s possible to download the games without the launcher directly from the website? I didn’t see that option.

Although the site doesn’t seem to work very well. The wish list function hasn’t worked on any browser I’ve tried.

My only Mac is a work laptop so idk what the library looks like. However on windows, if you mouse over your name and click "games" it takes you to a library screen. From there, click on the game you want to dl and a modal pops up. Near the bottom is an option titled "download offline backup game installers". This lets you bypass the gog launcher and install them directly.
