Dragon soy curls
Sauce is tamari, ketchup, garlic, ginger, and sambal, and I air fried the soy curls with habanero powder, tamari, and more garlic and ginger before tossing them in the sauce. It's a terrible picture but it's delicious, can recommend.

I keep hearing about soy curls, maybe it is time i finally try them. If you are in the states, is there a brand you recommend (preferably one that ships, as i am in a rural town with a Walmart and 1 grocery store).

I think local food co-ops or more natural food stores often carry them as well. They're so good, and they last a long time. Definitely worth trying out.

I order the 12 lb. box and store them in two 5 gallon buckets. In recent years I have gotten more into making seitan from wheat gluten powder, but the curls are still a good option and my preferred choice for fajitas.
Got my curls in today, gave it a go. I halved the recipe I used since I was only trying them out. They were really good.
