Once any extra Window Manager/Desktop Environment is installed, an option should appear to switch which WM/DE you wish to log into on your Display Manager (the Linux equivalent to the login screen; Not to be confused with the lock screen)

I would be trying with open source, so I need some expert opinion so that I don't run into a breakdown even before I learn to walk.
Most likely, yes.
Although, do note that some DE pairings (e.g. GNOME and KDE) don't mix together very well and might break eachother if you're not careful (evilwm probably won't by virtue of being a WM and not a full DE, though).
