Custom launchers and icon packs should work on any android version
Most should work you just risk adding an extra place someone can attack your phone so give a good vetting to any custom additions.

I couldn't find any user reports, but CalyxOS for the Pixel Fold is currently in beta. They say that everything should be working, though.
