Fancy Nancy Visits: Pad Thai Salad with Peanut-Lime Dragon Dressing
I've used this as inspiration, tho never fully constructed the exact salad dressing as described. I definitely love some peanut dressing with lettuce, tho!

It is funny in the intro she talks about good olive oil and watching weight; I'm a no-oiler haha, I just leave out the oil and don't worry about weight gain/loss any more
