I used Graphene for a month. It was absolutely amazing, except from not having contactless payment.
The sooner they win their lawsuit against Google to get 3rd party OS attestation the better. I'll jump back in a heartbeat

Their camera app got much better recently, but you can also just go ahead and install the stock Pixel camera app from the play store, and use Graphene's network toggle to deny it internet access

Does its camera app work well? Would it lack the nice HDR post proccesing most modern phones have?

The camera was never a priority for me. Seemed fine for my very basic needs, but I can't comment on it's actual features or quality

Most people buy the Pixel phones for its good camera. So I wonder if installing a different OS would affect the camera quality.

I'm using the Google Pixel Camera on Graphene OS and don't believe there's any difference in quality. It doesn't require Google Play Services to be installed and you can deny it network access to cut it off completely.
