So this new place just opened up about 2 months ago but it's been the same lady by herself for all that time. Don't get me wrong, she's good at what she does, but I like to switch it up. So my question is does anyone know when they rotate?

If she owns the shop there may be no rotation. You may need to search out another place if this one is not fullfilling your desire for novelty.
